| 5g | EC-118 Yeast (Champagne) |
| 2kg | lemons, juiced |
| 4g | yeast nutrient |
| 2 lemons | zested |
Mix lemon juice, glucose, and some water. Boil for 20 minutes and dissolve. Dilute to 20 litres in fermenter. Pitched yeast at 32'C. Ferment and prime as per beer.
