Black Rock Cider II

Ingredients

1Black Rock Cider kit
1kgwhite sugar (we were out of glucose)
1 sachet (5g)Wander Premium Yeast (yup, it's a beer yeast)

Method

Filled container to 18.5 litres, rather than the 23.0 suggested. We've had good success with this cider before, but stronger mixes always tend to be nicer. Hopefully this don't be too strong.

The beer kit is old, and we're getting back into homebrewing after a long absence. We're using what we have on-hand, which means the wrong yeast, and the wrong sugar. Hopefully the cider won't suffer from this too much.

Looks like the thermometer on the side of the microbrewery is getting old. I couldn't read the temperature from it. In order to err on the side of caution, we waited a good 30 minutes for everything to cool before pitching the yeast.

Notes

The smaller bottles containing more sediment exploded a couple of weeks after bottling. The bottles without sediment have been fine. There's probably a lesson to be learnt here.

Tasting Notes

11 September, 2004. Having only been in the bottle for a week, we didn't expect the cider to be fizzy, and it's not. However it does taste awfully good, much better than when we had bottled it. The taste is crisp and strong, so it looks like we may end up with something quite drinkable.

29 September, 2004 This stuff must be good, as myself and our guests have been polishing off quite a number of bottles over the last few weeks. A great cider with a clean taste. Definitely should make again.
