This is essentially the same as our earlier Pilsner, but we called it Election Pilsner since it was made on the date of the Australian Federal Election.
Followed instructions in the converter kit, although left the hops in the cooling mixture for longer than 10 minutes.

2004-10-17 Took an SG reading and sample. Obviously unfinished beer never tastes good, but our taste was quite acceptable and demonstrated plenty of promise.
2004-10-24 Tasted during bottling. This is a surprisingly strongly-flavoured beer, quite possibly because we left the hops in the mixture so long. Shows plenty of promise, although it may end being a little too bitter in the end.
2004-10-30 Came back from Sydney with eagerness to try our new beer. The beer itself is great, but with one serious problem. It's flat! No head, no bubbles. Very dissapointing. Maybe it just hasn't had enough time in the bottle, but we may end up having to open all the bottles and add more yeast, and that's not something I look forward to. The moral of the story is not to leave the beer in the fermenter after fermentation is finished.
2005-03-02 Not much of this brew left now. It bubbled up nicely, just needed some time. A very pleasant beer, easy to drink, and wonderful flavours. I think this is going to be a favourite, and well worth looking at making again.
