Despite the confidence that we'd brewed this the same as the previous cider, we'd made a serious difference. By using glucose in the brew rather than white sugar we again got an insipid but fizzy cider.
All future ciders (and probably the ginger beers) will use raw or white sugar. The theory is that these contain unfermentable sugars which leave the drink sweet tasting.
Took about a year for us to finish this off.
