| 1.5 litres | strained lemon juice |
| 2 tsp | yeast nutrient |
This is the same as our wonderful Lemonade III, but with extra yeast and nutrient added to try and speed fermentation.
Mix lemon juice, glucose, zest, and some water. Boil for 10 minutes and dissolve. Pour into fermenter and dilute to 20 litres, add yeast nutrient and stir. Pitched yeast at 32'C. Ferment and prime as per beer.
Note that zest was added to the boiled ingredients at the start, and was poured unstrained into the fermenter.

2005 November or December Leaving the zest in the fermenter leaves a slightly bitter taste, more like "bitter lemon" than lemonade. Very fizzy and nicely refreshing. Unfortunately we were so busy enjoying the brew that we didn't get around to recording details earlier. Brew time took approximately a month this time, and got to a % alcohol of about that of beer so about 5%.
2006-01-31 Turns out this drink is a favourite with our friends. The slightly bitter taste is offset nicely by the sweetness. We'll have to try this again, although we may want to put less peel into the fermenter.
